การเปลี่ยนแปลงภูมิทัศน์สวนผลไม้ไทย กรณีศึกษา ร้านอาหารและเครื่องดื่มในสวน จังหวัดนนทบุรีและนครปฐม

บทคัดย่อ
ภูมิทัศน์สวนผลไม้ไทยมีคุณค่าควรแก่การอนุรักษ์เป็นมรดกทางวัฒนธรรม ปัจจุบันยังมีสวนหลายแห่งที่เจ้าของพยายามรักษาสภาพดั้งเดิมของสวนไว้ด้วยการสร้างธุรกิจต่อยอดจากมรดกที่ได้รับมา บทความนี้มีวัตถุประสงค์เพื่อสำรวจการเปลี่ยนแปลงภูมิทัศน์ของสวนผลไม้ไทยที่ถูกปรับเปลี่ยนเป็นร้านอาหารและเครื่องดื่มในสวน และวิเคราะห์เปรียบเทียบลักษณะของการเปลี่ยนแปลงภูมิทัศน์ในช่วงระหว่างปี โดยการสำรวจ สังเกต และเปรียบเทียบสภาพภูมิทัศน์และบรรยากาศที่เปลี่ยนไปเป็นร้านอาหารและเครื่องดื่มในสวนผลไม้ ในจังหวัดนนทบุรีและจังหวัดนครปฐม จำนวน 5 ร้าน ในช่วงฤดูฝนและฤดูแล้ง ผลการศึกษาพบว่า ทุกร้านที่เข้าเก็บข้อมูลมีการรักษาลักษณะทางกายภาพที่เป็นภูมิทัศน์เกษตรกรรมของสวนผลไม้ไทยเอาไว้ แต่มีการปรับเปลี่ยนพื้นที่ให้เอื้อต่อการดำเนินธุรกิจในสัดส่วนที่ต่างกัน สำหรับการเปลี่ยนแปลงภูมิทัศน์ในช่วงปี พบว่า ระดับน้ำในร่องสวนทั้ง 5 สวนมีการเปลี่ยนแปลงไม่มากนัก พบการเปลี่ยนแปลงของภูมิทัศน์อันเกิดจากมนุษย์ ได้แก่ การก่อสร้างและปรับพื้นที่ การตกแต่งสถานที่ การตัดแต่ง เพิ่ม หรือย้ายพืชพรรณ นอกจากนี้ ยังพบการเปลี่ยนแปลงทางธรรมชาติที่เป็นไปตามฤดูกาล โดยในช่วงฤดูฝนพืชพรรณจะมีความสมบูรณ์สูง ส่วนใหญ่มีพุ่มใบหนาแน่น ส่วนในฤดูแล้งพืชหลายชนิดมีการผลิดอกออกผล จะเห็นได้ว่าการจัดการให้สวนมีบรรยากาศเปลี่ยนไปในระหว่างปีมีแนวโน้มที่จะทำให้เกิดประสบการณ์ที่ได้รับจากสถานที่หลากหลายขึ้น เป็นการเอื้อต่อการดำเนินธุรกิจ ซึ่งส่งผลให้เกิดความเป็นไปได้ในการอนุรักษ์สวนผลไม้ไทยให้คงอยู่ต่อไปได้มากขึ้น
