Research and Development of Set Menu from Local Wisdom to Creative Economy, Huai Khrai Sub-district, Mae Sai District, Chiang Rai Province

Abstract

The research objectives were to study the local wisdom of local food and develop a set menu from local wisdom for the creative economy. The study on the wisdom of local food and developing food menus from local wisdom to the creative economy by using a specific target group selection from people with knowledge and expertise in local food in Huai Khrai Subdistrict, Mae Sai District, Chiang Rai Province, 20 people. Data were collected by in-depth interviews, participatory observation, and organizing a brainstorming forum (Focus Group Discussion).


The result was found to be diverse indigenous groups, culture, way of life, and food in the Huai Krai Sub-district area. They were grouped in the conservation and transmission of traditional culture: Tai Ya, Tai Lue, Yunnan Chinese, and Tai Yai.


Each indigenous group was unique in its own particular way. Food wisdom that had a unique locality, such as Sa Som, Potato Soup, Mhoo Pard Mun, Khom Kai, and khao Yok. Each recipe was original. Ingredients were locally sourced herbal ingredients and methods were based on wisdom passed down from generation to generation.


The development of set menu and the preparation of the set menu from Local wisdom to creative economy, Huai Khrai Sub-district, Mae Sai District, Chiang Rai Province, the researchers and the target groups jointly selected the food menu with the unique culture of the area to be arranged as a set menu such as Khao Yok, Sa Som, Potato Soup and dessert as a media to create a story about the history of the food menu to the creative economy as a guideline for creating additional careers and to increase income for the community and host a welcome party for visitors in Huai Krai Sub-district, Mae Sai District, Chiang Rai Province.
