ผลของคาราจีแนนต่อคุณภาพของเยลลี่ถั่วเหลืองเพาะงอก

บทคัดย่อ

งานวิจัยนี้มีวัตถุประสงค์เพื่อศึกษาผลของสารคาราจีแนน 5 ระดับ (0.4, 0.5, 0.6, 0.7 และ 0.8%) ต่อคุณภาพของผลิตภัณฑ์เยลลี่ถั่วเหลืองเพาะงอก ผลการวิจัยพบว่าปริมาณสารคาราจีแนน มีผลต่อลักษณะเยลลี่ถั่วเหลืองเพาะงอกอย่างมีนัยสำคัญทางสถิติ โดยผลิตภัณฑ์เยลลี่ถั่วเหลืองเพาะงอกสูตรที่ 3 (คาราจีแนน 0.6%) มีคะแนนการยอมรับด้านความนุ่ม (คะแนน 7.13) และความชอบโดยรวม (คะแนน 6.90) สูงที่สุด มีค่าการแยกตัวของน้ำร้อยละ 6.00 ค่าความแข็ง 709.00 g force ค่าการยึดติด 71.32 g force·sec และค่าความเหนียว 589.50 g force ค่าสี L* 73.03 ค่า a* -1.05 ค่า b* 6.28 องค์ประกอบทางเคมีของเยลลี่ถั่วเหลืองเพาะงอก มีปริมาณความชื้น 90.97%. เถ้า 0.41% ไขมัน 2.23% โปรตีน 4.06% กากใย 1.28% และคาร์โบไฮเดรต 2.33% มีค่าพลังงาน 45.68 kcal มีสารประกอบฟีนอลิก 1.84 mg GAE/g และมีฤทธิ์การต้านอนุมูลอิสระ 9.14 µmol trolox equivalents/g
