Local Wisdom of Production "Kai-Kholae" from Toongpla Community Pattani Province

Abstract
Kai-Kohlae is a of primitive local foods in Pattani province but it is not available easily in the present. To sustain this traditional recipe, the information of Kai-Kohlae was inverstigated by reviewing literature, observing and interviewing persons in Toongpla area, a region in Pattani province where Kai-Kohlae is still well-know and available. It was found that Kai-Kohlae has been a secret recipe of Thai-Malay families since 100 years age, but no evidence about the origin to this recipe. In Toongpla area, there were 30 producers who were older than 50 years old but only 46.7% of them kept this business to be going on. In addition, this career was no interested because of low income (200 – 300 baht a day), short shelf-life of products, expensive raw materials, low demands, bird flu crisis, and unrest situation of three Southern border provinces. However, this survey showed that 52.9% of 242 consumers preferred this recipe of a great extent. It, therefore, should be conserved, supported, and promoted for the beneficiary of producers in the communities as well as the consumers of this tasty Kai-Kohlae.
