The Development of Pre-Service Home Economics Teachers’ Food Literacy via Various Learning Activities

This study aimed to develop pre-service home economics teachers’ food literacy via various learning activities. The participants were twenty second to fourth years pre-service home economics teachers who majoring in home economics in the university in academic year 2018. The research instruments were food literacy lesson plans, reflective journal, food literacy activities evaluation form, food literacy survey and 21st century and learning skills survey. The data were analyzed by percentage, mean and content analysis. The researcher reviewed the literature, designed and implemented the food literacy activities. During the activities, the pre-service teachers designed and implemented the food literacy activities for 20 minutes. After the activities, the pre-service teachers’ activities were evaluated, and their food literacy and 21st century and learning skills were surveyed. The result showed that the food literacy activities satisfied most pre-service teachers. However, there are some suggestions for some activities including the time for the beginning of food literacy activities should be increased for more understanding. In term of 21st century and learning skills, it was found that they were in the high level. Moreover, some activities could promote more than one skill and most pre-service teachers assessed themselves in the high level.
